Now is a great time to visit Hobart, and its all about the food!

While Winter is often a quieter season at Islington Hotel, this year there has been a hive of activity in preparation for the season ahead. 


In the past few months we have upgraded the beds in all rooms, replaced furniture throughout the hotel, launched our new website, polished up our general areas and redesigned the beautiful garden.

This is in addition to the amazing production coming from the Islington Kitchen under the watch of our new Head Chef, Zac Shearer.

He has embraced the country kitchen ethos and is producing Islington's first sourdough breads, charcuterie, cheeses, sausages, pastries and more! Our vegetable garden continues to grow in size and its bounty makes its way onto the menu nightly.

Zac's Winter menu has been a hit with our guests and the occasional Hobartians that have come to dine with us.

With all of this recent change, I invite you to come and see the upgrades for yourself.

For our loyal previous guests, I would like to extend a 15% discount on the best nightly room rate and a complimentary bottle of Tasmanian Pinot waiting for you on arrival.

Introducing Zac Shearer

After time at Lizard Island Resort, Bedarra Island Rainforest Retreat & Longrain in Melbourne, Zac returned to Tasmania where he originally fell in love with cooking. 

His passion for the island’s best produce has shone through ever since. 

Zac has worked in some of the best restaurants and Southern Tasmania (Peppermint Bay, The Source, Pigeon Hole) before opening his own business in 2012.

Art at Islington

Meet our newest edition to the Islington art collection, The King of Punchbowl. 


Created by Victorian artist Rona Green, the 'King' is keeping a close watch on the west wing of Islington Hotel.  

Rona fantastical figurative prints, poppets, paintings and drawings have explored ideas about the nature of individuality for the past 20 years.
