Since leaving Marque IV and Peppermint Bay, Paul has been enjoying exploring some new ideas along with his (and our) favourites in Islington’s intimate, open kitchen environment.

Come and have a chat with the chef, maybe even coax a recipe out of him after a 4, 5 or 6 course degustation in our beautiful conservatory dining room.

See what Paul’s serving up and stay the night for only $100 more per person.  Get a group of up to 12 friends and dine in the library, Paul will even tailor the menu to you.

Dinner starts from $80 per person.

We use seasonal, local and organic ingredients from small producers or our garden where possible. All wines on the menu are from tasmanian privately owned vineyards and available in the honour bar.
